I have eaten Drum a couple times. The "trick" if you can call it that was to keep it alive. They spoil super fast once dead. So basically kept it alive until I was ready to clean it, then i got the meat on the grill as fast as I could. It was a really large flake fish, much like a salt-water fish (which makes sense since these are such a close relative of regular ocean drum). Taste was great, but once the meat cooled down it got pretty tough. So definitely reccomend eating it when hot.
I suspect it would be great battered and fried... but then just about anything is. A final note that I didn't see mentioned above, if you do keep it... try to find the pearls in their head. They are pretty cool (google it for more info). |
