Just checking out this video and was surprised by how little meat there is on burbot! Woah, must have big organs!



Burbot has a relatively pretty big gut area with not very meaty tail compared to other fish.
I think burbot have huge livers, which are super rich in vitamin A and D. Gut a haul of burbot and leave the livers in the bush for the foxes, and you'll be doing the local trapper a favour: http://en.wikipedia.org/wiki/Rowell_Laboratories,_Inc.
You don't get a pile of meat but what you do get is delicious.

Not sure what everyone likes to skin them. I've found skinning them is a bit of a hassle. They can be filleted just like any other fish..
