You prepare them the same as you would prepare shark as there is only 1 center bone to worry about. However I remember we had to cut a piece of the tail off and leave the head on until you finish fillet it. For the skin you basically use a pliers and tear the skin off similar to catfish. To cook it we normally just grill it or deep fry.
